Macadamia and Sun Blushed Tomato Pesto

  • 1 Blender or Food Processor


  • 80 Grams JC's Australian Natural Macadamias
  • 80 Grams Sun Blushed Tomatoes
  • 80 Grams Parmesan
  • 1 Bunch Basil
  • 200 Ml Olive Oil
  • Squeeze Lemon Juice
  • Salt to Season


  • Preheat oven to 120°C. While waiting, lay the 80g of JC's macadamias on a single layer on a baking tray, spray lightly with vegetable oil and sprinkle a touch of salt on top. Place in oven for 8-10 minutes or until lightly golden.
  • Place all ingredients, except the oil in the blender and purée adding the oil a little at a time until its all gone
  • Taste and add seasonsing until happy with taste. Before storing in your fridge, add a little olive oil on top as this will help prolong the life and colour of your pesto
