How to cook with Pumpkin Seeds

There’s no shortage of ideas when it comes to eating and cooking Pepitas. You can roast them for easy snacking or add them to gourmet meals for amazing texture and flavour. People the world over add pumpkin seeds to muesli and granola for a healthy kick. Sprinkle them in soups and stews or crush them into small pieces for a crunchy garnish that can accompany salads and casseroles. Pepitas are great in bread loaves and can also be used in pesto. Chocolate Pumpkin Seed Cookies

These crunchy cookies are great for spoiling family and are guaranteed to leave people reaching for more. You’ll need a bunch of standard ingredients to make the batter such as sugar, flour, butter and oats plus a few extra seedy goodies too. But be sure to use quality chocolate to ensure that you get the best flavour and a high percentage of cocoa. When paired with delicious pumpkin seeds, your sweet temptations will taste as good as they look.  

Pumpkin Seed Granola Bars

Granola bars are a winner in every household and it’s not hard to see why. These on-the-go, healthy treats can be prepared well in advance and will have you jumping out the door to tackle the day ahead. 

Gather as many nuts and seeds as you can – think Flaked Almonds, Pepitas, Walnuts, Pecans etc. – and mix with a bag of rolled oats. 

Then, bind honey and olive oil in a heated pot and pour over your mixture of granola goodness. 

Bake in the oven at 180°C for 15 minutes before allowing to rest. 

Break into pieces and store in containers for easy eating. Enjoy at home, on-the-go or anytime hunger strikes.
