Pre-heat the oven to 120°C and grease a roasting tin/baking sheet with oil
In a large mixing bowl, whisk the egg white and vanilla extract for a few minutes until frothy
Add the pecans and mix until coated.
In a small bowl, mix the sugar, salt and cinnamon. Add this to the pecans and stir to combine.
Pour into the prepared tray and spread out into one layer. Roast in the oven for 1 hour, stirring every 15 minutes
Remove from the oven and allow to cool
